Transcript: First Lady's Remarks, Top Chef Event, Let's Move! Anniversary Tour, Dallas, Texas

Dallas, TX: During the fourth stop on her Let's Move! anniversary tour, First Lady Michelle Obama filmed a special segment for Bravo TV show Top Chef that will appear on a future episode. AT "TOP CHEF" SCHOOL EVENT

MRS. OBAMA: Wow! Wasn't that fun?

AUDIENCE: Yes! (Applause.)

MRS. OBAMA: I think the point in our decision is that when you've got great chefs paired with kids that are enthusiastic, and you've got schools that care, everybody is a winner. I think every single one of those meals would be something that school kids would love, they would get the kind of nourishment they needed. And we sent the signal that good food doesn't have to cost a ton of money.

So we're just excited that "Top Chef" hosted this competition. All our teams, all our schools were amazing. We're so proud of you.

I have to start by thanking Tom and everyone from "Top Chef" for putting together such a great competition. Let's give them a round of applause. Tom, thank you. (Applause.)

And of course, we have to thank all our hype men from the Dallas Cowboys, right? (Applause.) DeMarcus Ware, Miles Austin, Felix Jones, and DeMarco Murray -- you all were fabulous. Hope you all learned a little something here. (Applause.)

I also want to recognize Dora Rivas. She's the Director of Food and Child Nutrition Services for the Dallas Schools. She's just been amazing. (Applause.) And I want to thank everyone from the Kleberg/Rylie Recreation Center for hosting us here today. This is very nice. (Applause.)

And finally, I want to say thank you to all of you guys -- our students, our teachers, the staff. Thank you for being here with us as we celebrate the second anniversary of "Let’s Move."

Now, this is the third state -- the third state -- that we’ve visited in just a little over a day, so we've been busy. We've been to Iowa. We’ve been to Arkansas. And right after we leave here, we’re going to be in Florida. And we're doing this because we want to see what folks across this country are doing to eat healthy and to get active. And there are wonderful stories all over this country, including right here.

And that's one of the reasons why I'm here in Dallas today, because I’ve heard that you all are doing some terrific work through the HealthierUS Schools Challenge. You all have been doing some amazing things.

As everybody here knows, this challenge is run by the Department of Agriculture, or the USDA as we call it. And it recognizes schools that meet the highest national standards for nutrition and physical activity -- the highest standards. These schools are the schools that are finding creative, innovative ways to serve healthy meals and to get kids active. So it's a twofer -- it's not just nutrition, but it's also physical activity. And these high-ranking schools are doing it at a time when budgets are tight -- and we all know that budgets are tight -- and there aren't a whole lot of resources to go around, again, which is why this competition is important, because schools are being asked to do so much more with less.

But right here in Dallas, more than 150 schools have been recognized in this challenge. That includes 78 schools that have earned Gold Awards, which go to schools that meet the highest levels of standards. And that’s more than any other school district in the entire country. Did you hear that? (Applause.) Dallas, you have more Gold schools in this district than anywhere in the country. And that includes schools like Nancy Moseley Elementary School! (Applause.)

So that's why we're here, because you all are really leading the way for schools. And we want schools across the country to start following your lead. See, when we first launched "Let's Move" just two years ago, we set a goal of doubling the number of HealthierUS Schools by June of 2011, which was last year. And then we had a goal of adding 1,000 more schools, new schools each year. And now -- when we set this goal, there were just 625 HealthierUS Schools around the entire country. By June of last year, 2011, we had more than doubled that number -- more than doubled that number in a very short period of time. And as far as reaching our goal of 1,000 new schools by this year, well, today, thanks to the hard work and support of the USDA staff all across this country, I'm proud to announce that 1,589 schools have already earned awards in the challenge this school year. (Applause.) Good stuff, good stuff.

Now, that brings the total number of schools to 2,862. That's up from just about 600 -- very good stuff.

And we’re trying to help even more schools win this challenge with a fun program that we call "Chefs Move to School." And that's another reason why we're here at "Top Chef," because chefs have been a key to helping so many schools reach their goals. This program brings local chefs into our schools to help prepare healthier food -- just like we did here today -- and to teach our children about healthy eating. And so far, we’ve had more than 3,400 local chefs sign up to volunteer throughout the country. The chefs have been amazing. We did a kickoff event at the South Lawn, and how many chefs -- we had over -- we had six, 700 chefs in their white coats on the South Lawn, and it was powerful because our chefs know the value of food in the life of our families, our communities and our children, and they're stepping up. And right here in Dallas, chefs from this program have done healthy cooking demonstrations, they’ve helped develop new recipes for schools, for the meals -- just like we did here today -- and they've done new training for kitchen staffs around the city.

So they're taking time out of their personal lives to come in and train some of our staff and our teachers. It's just been wonderful. And I’m pleased today to announce that we’re taking this program, the chefs program, to the next level. We’re working with groups from around the country to launch a new website that we're calling ChefsMoveToSchools.org. This website will make it easier for chefs to connect with schools and to share ideas with one another. Because it's not the interest -- some chef -- there are so many chefs that want to get involved, they just need to know how to link up with the school and how to work with them. This website is going to do just that.

So I’m counting on chefs and schools across the country to go to the site if they're interested, and we hope everyone is; we want them to sign up, and we want them to start cooking and working together. And I want to thank the School Nutrition Association, the American Culinary Federation, Share Our Strength, and there were so many other groups who have stepped up to make this program a big success. Again, "Let's Move" is only possible with partners -- people coming together, all for you guys, all to make you healthier.

So we have come a very long way in our first two years of "Let's Move." And we couldn’t have done it without students, teachers and -- like the folks here in Dallas. And our athletes as well, they have been stepping up. Athletes -- when they're asked, they are ready to be here with you guys. They are some of the best role models you can have, and we're so proud that so many of them -- particularly the NFL has been finding ways to get you guys to move and understand the importance of nutrition.

So I want to thank everyone for everything that you've done. And to the students, what did I say to each of you? It's important to eat right, it's important to get your exercise, but it's more important to be a good student -- that all of these things add up. It is very hard to focus at school if you don't have good fuel in your body. And that is the truth. This isn't just a grownup telling you to eat your vegetables. The truth is, is that your brain works better on good food. And we need you guys to be at your very best, because you're going to be the ones that are going to be the next leaders for our country, right? We want you to be the next principals, and NFL stars; we want you to be the next presidents of the United States, right?

So we need you guys to be healthy and take this seriously, and you need to pass this on to your kids, right? When you grow up, right? You've got to teach your kids how to eat right. So can we count on you to do that?

AUDIENCE: Yes!

MRS. OBAMA: I am so proud of you all. You all have been terrific. Thank you, guys, and have fun, all right? (Applause.)

School Lunch Champions: Everyone Wins At First Lady's "Top Chef" Let's Move! Challenge

Second anniversary celebration: Mrs. Obama announces big changes for Chefs Move to Schools project, and a milestone for HealthierUS Schools Challenge...

All three Top Chef teams competing in a cooking challenge to celebrate the second anniversary of First Lady Michelle Obama's Let's Move! campaign were declared winners on Friday morning, in what Top Chef host Tom Colicchio hailed as an historic "first" for the Bravo TV show. Mrs. Obama, Colicchio, and Senior Policy Advisor for Healthy Food Initiatives Sam Kass served as judges during the event at the Kleberg/Rylie Recreation Center, where the teams had half an hour to use USDA's school lunch guidelines--and budgetary constraints--to create their meals. Each team was joined by two pint-sized sous chefs selected from a local school. "I think the point in our decision is that when you've got great chefs paired with kids that are enthusiastic, and you've got schools that care, everybody is a winner," Mrs. Obama said, after huddling with Kass and Colicchio to discuss the pork chops, whole wheat turkey tacos, and veggie delights created by the chefs.

"And we sent the signal that good food doesn't have to cost a ton of money."

The non-contest was filmed by Bravo and White House video crews, and will air in the future on the Emmy-award winning Top Chef, currently in the midst of its ninth season and filming in Dallas. It was designed to be an exciting infomercial to promote the Chefs Move to Schools project, a Let's Move! component that pairs professional chefs with public schools to boost nutrition initiatives. Mrs. Obama announced changes for Chefs Move during the event.

Colicchio has been involved with Chefs Move from the beginning, and joined Mrs. Obama for the major White House launch event in June of 2010, when about 600 professional chefs gathered in their whites on the South Lawn as the First Lady announced the project. Kass appeared as a judge on a special episode of Top Chef devoted to school lunches during season seven, where the cheftestants had the same mandate: Cook a healthy school lunch with a tiny budget.

In Dallas, about 110 kids from Nancy Moseley Elementary School were invited to provide the cheering backdrop to the cooking contest, and they sat in bleachers along one wall during the event, the fourth stop on Mrs. Obama's three-day anniversary tour. Past and current Top Chef stars competed in three duos: Team Red, Grayson Schmitz and Paul Qui; Team White, DC's Spike Mendelsohn and Jennifer Carroll; and Team Blue, Fabio Viviani and Richard Blais. Dallas Cowboys tough guys DeMarcus Ware, Miles Austin, Felix Jones, and DeMarco Murray added star power, and they told the cameras what they eat to win, in addition to thrilling the kids by handing out high fives.

Changes for Chefs Move to Schools....
After announcing that everyone is a winner, the First Lady made a big announcement about the Chefs Move to Schools program. The project has been overseen by Kass and unnamed USDA officials, and now has 3,400 chefs and 3,350 schools signed on. While a great idea, Chefs Move has struggled for a variety of reasons. No more worries, according to Mrs. Obama.

"I’m pleased today to announce that we’re taking this program, the chefs program, to the next level," Mrs. Obama said.

In a savvy move, the White House has now asked the School Nutrition Association to be in charge of Chefs Move to Schools, Mrs. Obama said. The group is partnering with professional chef association the American Culinary Federation, USDA, hunger action group Share Our Strength, and Partnership for a Healthier America, the non-profit created to support the Let's Move1 campaign, as well as other groups to run the project. The coalition has a new website, now live: ChefsMovetoSchools.org. The initiative previously had a few pages on USDA's huge website.

"I’m counting on chefs and schools across the country to go to the site if they're interested, and we hope everyone is; we want them to sign up, and we want them to start cooking and working together," Mrs. Obama said.

In the past, one of the biggest problems with Chefs Move was getting the School Nutrition Association to full embrace the project. The massive professional organization is made up of more than 54,000 cafeteria managers, school nutritionists, and school cooks from across the US, and the group was so worried that the Let's Move! project would put members out of work, or force them to change food service in impossible ways, that Kass was sent to their annual convention in 2010 (which also happened to be in Dallas) to answer questions and ease the very vocal worrying.

This writer was at Kass' main meeting with members, who were both insulted by the implication that they needed the help of professional chefs, and who also feared they were being blamed for America's child obesity problem. Kass spent two whole days at the Dallas Convention Center, doing meet n' greets and making peace. USDA officials were on hand too.

Another problem: Chefs Move was also originally launched without any kind of tool kit or rubric designed to help professional chefs and schools figure out how to work together, or how to navigate the complicated bureaucracy that exists in schools and school districts. A Chefs Move tool kit was unveiled almost a year after Mrs. Obama announced the project. Major cookware companies, including All Clad, offered culinary kits to participating schools, and more than 1,000 of these have now been distributed, Mrs. Obama said on Friday.

HealthierUS Schools Challenge...
Mrs. Obama also had another big announcement on Friday. The Let's Move! team has showered a lot of attention on the Dallas Independent School District because it has the most schools in the US--154--that have been rewarded in USDA's HealthierUS Schools Challenge (HUSC), a program that promotes voluntary best practices in nutrition and fitness policy by rewarding participating schools with plaques and cash grants. Moseley is one of 78 that have been named a Gold-level winner, one of four categories for awards: Bronze, Silver, Gold, and Gold with Distinction.

"That's why we're here, because you all are really leading the way for schools," Mrs. Obamatold the cheering kids and representatives from Dallas schools.

The big news: 1,589 new schools have received certification for the HUSC for the 2011-2012 school year, meeting a goal Mrs. Obama and USDA set at the launch of Let's Move! two years ago to double the number of schools that were Challenge winners in the first year, and add 1,000 more schools each year after.

"When we set this goal, there were just 625 HealthierUS Schools around the entire country," Mrs. Obama said.

There are now 2,862 schools certified in total.

What did the chefs cook?
Unfortunately, the kids in the bleachers couldn't see much of the whiz-bang cooking action at the event, thanks to all the Top Chef camera crews buzzing around. Nor could the media, jammed behind a rope line on the other side of the room. The audio in the rec center was terrible, too. It will all sound fine when the segment appears on TV, however. The kids, who'd already been in their seats for more than an hour, had been incredibly well behaved as they waited an extra half hour for Mrs. Obama to show up to start the event.

The First Lady's grand entrance was announced twice by Kass, who served as emcee, working the floor and holding a cordless mic. Mrs. Obama didn't come through the doors either time. She was in another part of the building, filming a different TV spot.

"You see, kids?" Colicchio called out after Mrs. Obama failed to appear the second time. "This is how TV is made. It's called hurry up and wait."

The Cowbys' masked mascot, Rowdy, juggled and danced to distract the kids. When Mrs. Obama finally materialized, she of course received huge cheers, and made up for the delay by visiting with each group of kids as the chef teams cooked. Joined by Kass, she walked back and forth, asking the kids questions like "Who likes vegetables? Who's an A student? Who's going to college?"

The kids had been separated into three groups dressed in colors to match the Top Chef teams, who encouraged the kids to cheer for them. The kids happily obliged, even if they didn't know exactly what they were chanting for: The three cooking stations were at one end of the rec center, while a "pantry"--two tables laden with whole grains, baskets of fresh fruit, vegetables, breads, and paper wrapped meats--was at the other end. None of the chefs ever left their cooking stations, but the junior sous chefs occasionally dashed over to pluck an item.

The Red Team, with chefs Paul Qui and Grayson Schmitz, assisted by DeMarcus Ware, prepared whole wheat turkey tacos with a pureed melon juice. The White Team, chefs Spike Mendelsohn and Jennifer Carrol with Cowboy Miles Austin, made pork chops, homemade applesauce and roasted sweet potatoes. Blue Team chefs Fabio Viviano and Richard Blaise had two Cowboys, Felix Jones and DeMarco Murray, and made farro salad with feta, tomato and carrots simmered in fresh carrot juice.

The Top Chef segment is part of a massive TV push for Let's Move!: In recent weeks the First Lady has appeared on The Late Show with Jimmy Fallon, The Tonight Show with Jay Leno, The Rachael Ray Show, and The Ellen DeGeneres Show.

On the campaign trail...
It can't be overlooked that the three-day, eight event tour, which has three stops in that crucial 2012 battleground state, Florida, is also a swell stump trip for President Obama's re-election effort. The two reporters the White House selected to serve as the First Lady's traveling press pool--those who travel aboard her government plane, and report back to all other reporters about what Mrs. Obama is doing--are actually assigned at their home outlets to cover President Obama: Mark Landler of The New York Times and Carol Lee of The Wall Street Journal. Neither has expended much ink on Mrs. Obama in the past, unless it had to do with her impact on the President's popularity or campaigning. The First Lady's celebration for the one year anniversary of the Let's Move! campaign was a few hours in Georgia, with Mrs. Obama visiting a church and a school. The first anniversary was a relatively long time before the November 2012 election.

In addition to Kass, the aides accompanying Mrs. Obama on the three-day tour include her Chief of Staff, Tina Tchen; top Domestic Policy Advisor, Jocelyn Frye; Communications Director, Kristina Schake; and Press Secretary Hannah August, among others. Members of the White House new media team and photographers are capturing the action. Mrs. Obama travels to Florida on Friday afternoon, and finishes up there with two events on Saturday. Let's Move! Anniversary: A New Coalition & A New Website For "Chefs Move To Schools"

In this new video, Senior Policy Advisor for Healthy Food Initiatives Sam Kass discusses the Chefs Move to Schools project, a key component of Let's Move! that matches professional chefs to schools. This Friday, Day 2 of the Let's Move! second anniversary tour, First Lady Michelle Obama will spotlight Chefs Move with a visit to the Nancy Moseley Elementary School in Dallas, Texas. She'll announce a new coalition that will work together to expand Chefs Move, which will be made up of "leaders from the school and nutrition side" and "chefs and professional culinary organizations," Kass says onscreen. The video will be posted on a new website, www.ChefsMoveToSchools.org, which will debut on Friday.

Chefs Move, launched in June of 2010, is currently overseen by the US Department of Agriculture, and has not had its own website. There are currently 3,400 chefs and 3,350 schools signed up to participate, and Mrs. Obama is hoping the project will grow exponentially.

Second Anniversary Schedule: First Lady Michelle Obama, National Let's Move! Tour, Feb. 9-11

First Lady's tour includes eight stops in four states, and guest stars: Olympians, Top Chef contestants, Dallas Cowboys, Disney TV stars, Mickey Mouse, NASCAR champ, The Biggest Loser host...
2011 was a landmark year for the Let's Move! campaign, and as first reported here, First Lady Michelle Obama will celebrate with a national three-day tour beginning on Thursday, Feb. 9. It has been designed to "highlight examples of people making changes across the country, from a single family to an entire state," the White House said today when announcing the full schedule. Mrs. Obama will visit with thousands of people as she makes eight stops in four states: Iowa, Arkansas, Texas, and Florida. She'll be announcing new commitments and projects for Let's Move!.

The First Lady will be joined at events by TV and sports celebrities, including Olympians Michelle Qwan and Shawn Johnson, and NASCAR champ Carl Edwards, players from the Dallas Cowboys, Top Chef contestants, political leaders, parents, children, faith and community leaders, physicians, educators and grass roots activists. The First Lady will host a live and virtual Let's Move! Town Hall, watch a culinary competition, have dinner with a family in their home, join parents for a roundtable discussion at an Olive Garden restaurant, and participate in fitness activities with thousands of kids. Her stops include the Wells Fargo Arena in Des Moines, Iowa; an Air Force Base in Little Rock, Arkansas; a huge church in Longwood, Florida; and the Walt Disney World Resort. Mrs. Obama was last in Florida on Jan. 26, for an announcement of a partnership with Goya Foods for the Let's Move! campaign.

On the first day of her tour, Mrs. Obama will jet between three events in three states.

DAY 1, Feb. 9: Iowa, Arkansas, Texas

Let’s Move! Day in Iowa
Mrs. Obama begins the day with a huge event focused on fitness that will include 10,000 local children, grades 6-9, at Des Moines' Wells Fargo Arena, as she showcases Iowa's Healthiest State Initiative. Iowa Governor Terry Branstad will sign a proclamation establishing Feb. 9 as “Let’s Move! Day in Iowa” to celebrate the second anniversary. The Governor launched the Healthiest State Initiative five years ago, before entering office. The kids will be doing fitness activities, and will enjoy a healthy lunch.

Mrs. Obama will be joined by former two-term Iowa Governor and current Secretary of Agriculture Tom Vilsack, NASCAR racing champion and member of the President’s Council on Fitness, Sports and Nutrition Carl Edwards, Olympic figure skating champion and President’s Council member Michelle Kwan, Olympic champion gymnast Shawn Johnson, 2011 WNBA MVP Tamika Catchings, Health and Fitness Expert Bob Harper, Iowa State University Basketball coach and former NBA player Fred Hoiberg.

Local performers include Norwalk Show Choir, SE Polk High School Kick Team, Valley High School Competition Cheerleaders, Valley High School a cappella singing group, Elite Edge Dance Company, Storm Chasers Cheerleaders, Iowa Skippers, Waukee a cappella singing group, University of Iowa Breakers, American Idol’s Katelyn Epperly, Isiserettes and the UNI Interlude creators.

"Military Improving Nutrition for Servicemembers
"
Mrs. Obama travels to Little Rock, Ark, for an event at Little Rock Air Force Base where she will make an announcement "about the military’s efforts to improve the nutrition of food served throughout military bases." Mrs. Obama will receive a briefing on the Air Force’s healthy eating efforts from leadership and then visit the dining facility with cooks and airmen to discuss the changes.

Mrs. Obama will be joined by Assistant Secretary of Defense for Health Affairs Dr. Jonathan Woodson, Director of Air Force Services Brigadier General Eden Murrie, Deputy Assistant Secretary of Defense for Military Community and Family Policy Mr. Robert Gordon III, and Commander 19th Airlift Wing Colonel Brian S. Robinson.

The Base is part of a special pilot program that has "enhanced food service quality, variety and availability through new acquisition processes and redesign efforts," the White House said. More than one-quarter of 17-24 year- olds are too overweight to serve in the U.S. military, according to the Department of Defense, which spends an estimated $1.1 billion per year on medical care associated with excess weight and obesity.

"Parents and Businesses Making a Difference"

Mrs. Obama will host a roundtable dinner discussion with parents at a local Olive Garden restaurant. Darden Restaurants, Inc., parent to Olive Garden, is America's largest full-service restaurant company, and last year committed to revamping its menu offerings for Let's Move! The names of the parents who will join Mrs. Obama have not been released. The restaurant will remain open for business.

"Mrs. Obama will have a conversation with the parents about their efforts and get their ideas on how Let’s Move! can continue to support families across the country," the White House said.

DAY 2, Feb. 10: Texas, Florida

"Schools and Chefs Working Together;" Top Chef

In Dallas, Mrs. Obama will be at the Kleberg Rylie Recreation Center for an event spotlighting healthy food in schools and the Chefs Move to Schools project, launched in July of 2010. The Top Chef stars and the Cowboys will do battle in "a healthy cooking competition" as students from Nancy Moseley Elementary School watch. The school is a Gold school in the HealthierUS School Challenge program, a USDA program promoted by Let's Move!. The Dallas Independent School District has the most HUSC schools in the US, with 154, most at the Gold level.

Colicchio and Sam Kass will lead the judging as Colicchio will lead the judging, as Top Chefs Richard Blais, Fabio Viviani, Jennifer Carroll, Spike Mendelsohn, Grayson Schmitz and Paul Qui compete in a healthy cooking competition. WebMD Town Hall: "Simple Tips For Healthy Families"

Mrs. Obama will hold a live and virtual Let's Move! Town Hall at the Homestead YMCA Family Center, hosted by WebMD. Mrs. Obama and a panel of experts will "answer questions from a live local audience and a national online audience about how families can implement healthy changes in their daily lives." The panel will include WebMD’s Director of Nutrition Kathleen Zelman, pediatrician Dr. Hansa Bhargava, nutritionist Elizabeth Ward and the YMCA’s National Director for Health and Well-being Jim Kauffman.

YMCA joined Let's Move! in 2011 with a pledge to adopt a set of standards to ensure its childcare programs programs offer children fruits, vegetables and water as snacks and adequate physical activity.

"Family dinner: Change Begins At Home"

In the evening, in Orlando, Florida, Mrs. Obama will join a family at their home for dinner. The family "has made changes to become healthier," according to the White House. Mrs. Obama will "discuss the everyday changes families can make."

The First Lady begins the day in Longwood, Florida before traveling to Orlando to visit Disney World.

At Northland, A Church Distributed, Mrs. Obama will make remarks to more than 3,000 people as she discusses the achievements of Let's Move Faith and Communities, launched in November of 2010. Since then, "these organizations have initiated a broad range of activities including reporting over 2.8 million miles walked and working to provide healthy food to their congregations," according to the White House.

Speakers will include Northland Senior Pastor Dr. Joel Hunter, Mt. Sinai Missionary Baptist Church Pastor Larry Mills, Member of the President’s Council on Fitness, Sport, and Nutrition Donna Richardson Joyner, President of the National Hispanic Christian Leadership Conference Reverend Samuel Rodriguez and author and educator Donald Miller.

Performances will be by Yolanda Adams, the Northland Worship Team, the Evans High School Choir, Next Generation Kids, Orlando Aerial Arts, and Liberty Singers; and there will be a presentation by Roger Oxendale, CEO, Nemours Children’s Hospital, and the Nemours fitness team

Following the event at Northland, First Lady Michelle Obama will travel to ESPN Wide World of Sports at the Walt Disney World Resort to participate in a physical activity event for "hundreds of local kids and their families, including participants in the morning’s faith event."

Disney Channel and Disney XD stars and professional athletes will be on hand as "families participate in fun, physical activity stations," the White House said. "Disney Magic of Healthy Living program is aligned with the goals of Let’s Move! – the initiative is designed to partner with parents." Tickets are being distributed by local faith and community organizations.

In 2011, the First Lady celebrated the one-year anniversary of her campaign in 2011 in Georgia, with a speech at North Point Community Church in Alpharetta and a visit to Burgess-Peterson Academy in Atlanta.
